From Legend to History

The story goes that Panettone was invented in Milan during the times of the magnificent court of Ludwig the Moor. At a banquet the pastry chef got mixed up and burned the cake which, according to the custom of the period, had to be a jubilation of marzipan with dried fruit spices and honey. Having no other choice, the unfortunate chef allowed himself to be talked into serving the sweet bread that Toni the helper had prepared for the cooks’ table, mixing flour, eggs, butter, sugar and leaven with a handful of raisins and candied fruit pinched from the court pantry. The noble guests looked puzzled at what was served, tasting it and watching the Duke’s reaction. “What a novelty!” roared the Moor. “Butler what is it?” - a race to the kitchen to find out. El pan de Toni (Tony’s bread) someone called it. Looking for a fuller sounding name they called it “Panettone”.
